Those holes are there to prevent the slices of whatever you’re cutting, particularly cheese, from sticking to the knife.

I don’t like coated knives.

Either have all ceramic or a steel or titanium (that will never appear on SLC).

I have some really good ceramic knives and they are SHARP. Nobody but me is allowed to even touch them. You do have to baby them.

I have an old green one somewhere out there in the 5th wheel along with my good china.....melamine.
We have that sharpener. I use that one because it latches to the counter.
